Rotel Chicken Mexican Casserole
3 split fryer breasts cooked and cubed
1 bag of tortilla chips crushed
1 can of Rotel
1 can Cream of Chicken soup
1 small can of chopped green chiles
1 lb of Velvetta or American Cheese
Directions:
Cook and dice your chicken. Mix together your Rotel, Soup, Green Chiles, and cubed Cheese. Heat this mixture in a microwave till melted and then add your chicken. In a Celebrating Home casserole dish, layer 1/2 your chips and 1/2 your cheese mixture. Repeat these layers and top with a few crushed chips. Bake at 350degrees until hot and bubbly. Its DELICIOUS!!!!
Ok I am one of those that I love to try new recipes.... I thought i'd try this one. Well we did and while it was good there are some changes I would make to it.
I used 2 cans of Rotel & 2 cans of cream of chicken 1 Can of chilies and still a bag of chips and the 1lb of cheese. I wanted to fill a 9x13 pan and have leftovers. I think if i would have just did the one can it would have made like an 8x8 size pan unless you dont want to do a lot of layers? I do think that the dinner itself needs more. It needed onions added to it and maybe even a few finely chopped jalapeno's, maybe some black olives cuz you can never go wrong with those in my household..., maybe even some shredded cheese sprinkled on top of it and possibly more chicken. I didn't use that much chicken and i wish i had more. I almost think next time i try it i might also use dark meat chicken (boil the chicken leg quarters then shred it once it's cooled off. It is usually what i do with my chicken tacos and chicken enchialadas) and i might also mix it with some taco seasoning for a bit of flavor. we loved the dish, just thought it was really bland. it also doesn't say how long you cook it for. I cooked mine for a little bit but i don't think i cooked it long enough?
